Lighter German Apple Pancake

Lighter-German-Pancake.jpgIt’s January. {Deep sigh} Time to re-acquaint myself with my LoseIt app (it counts my calories). But, DANG… it’s a cold LA Sunday. I want to turn on the oven and warm up the house by baking a cinnamony German Apple Pancake like this previous post.

My muffin top was not gonna let me get away with the full-fatty recipe, so I tweaked it.  Voila, Lighter German Apple Pancake.

This one is less butter, less sugar, no yolk, and uses fat-free milk.  No, it isn’t identical to the previous, but it’s definitely worthwhile. I’m not sure how many calories are in the other recipe I posted (it is here, if you missed it). Larry and I split this pancake, and LoseIt says my portion was 303 calories.  I took a two-mile walk (input that into LoseIt) and a short bike ride to scope out Open Houses in the neighborhood (YOU do that, don’t you??) (again, put into LoseIt) and that threw a bonus 200 calories into my budget for today.

If I want to lose some fat, I have to eat fewer calories than I burn on average, daily. If I burn extra calories – like the walk and bike ride – that helps me out, because in all honesty, my daily budget of 1549 calories (by LoseIt calculations to help me drop my muffin-top) is pretty darn easy to suck down in two meals, let alone three. Less meat helps. More veggies help. Less wine (which of course makes me WHINE) also helps.

Lighter Oven German Apple Pancake

  • 1 tablespoon unsalted butter
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon
  • 1 sweet apple such as Fuji, peeled, cored and thinly sliced
  • 3/4 cup Eggbeaters or liquid egg white
  • Dash salt
  • 1/2 cup white whole wheat flour
  • 1/2 cup fat-free milk
  • Dusting of powdered sugar

Preheat oven to 425 degrees F. Melt butter in a 12-inch ovenproof frying pan over high heat. Add brown sugar and cinnamon, stir to combine. Add apple slices and cook until just starting to soften, about 3 minutes. Turn off heat, arrange apples in single layer around bottom of pan.

Meanwhile, in a small bowl, whisk together Eggbeaters, salt, flour and milk. Pour mixture over apples, tip pan to spread evenly.

Bake in hot oven until puffed and brown, about 15 minutes. Invert onto large serving plate, dust with powdered sugar. Makes one 12-inch pancake, two servings at 303 calories each.

One marvelous thing about LoseIt, I lose it all the time: the app, the inclination to look. ForgetIt is more like it. Although these lighter recipes are worth remembering. Warm ovens redolent with cinnamony pancakes…ginger scones…Nelson wonders what it must be like to live in a home, with a cook, like that….
