Wisconsin ~ from whence my folks hail. We grew up on cheese. Not great cheese; it was mostly crummy cheap stuff back then. But cheese still makes me happy. And it’s an easy cooking ingredient. My gift to you… a roundup of four keeper cheese recipes.
Let’s cut to the CHEESE… my favorite cheese now that I’m all grown up and have money? Kerrygold, yummy Irish stuff, hands down. Next time I visit Wisconsin, I may change my mind.
- Top left, Chile Cheese Pie. Early in our marriage, I made this often. We both worked extremely long hours, and this was a simple dish to throw together. Great leftovers, too. I was a brown bagger for decades, my kind of recipe.
- Top right, it’s what Meryl Streep fed Steve Martin (and Alec Baldwin subsequently snuck) in the movie “It’s Complicated.” Croque Monsieur. Basically, man bait – an open faced, broiled ham, tomato and cheese sammy.
- Bottom left, small bites to impress. Mini Basil and Goat Cheese Turnovers use puffed pastry dough and bakes up flaky – flavorful. FAST.
- Bottom right, the Gold Standard of mac n’ cheese – Ronald Reagan’s famous recipe. Yes, as in President.
