Last autumn, we took a cooking class at the South Bay School of Cooking. The instructor’s spinach-stuffed chicken breast recipe featured a secret ingredient: her Mojo – a homemade blend of kosher salt, lemon zest and dried Italian herbs. Which made me think of the jumble of herbs in our spice pantry. Once home, I mixed together kosher salt and the contents of several bottles. Voila, Patti’s Mojo Spice Blend.
The recipe is 1 part salt to 2 parts dried herbs. This was my Simon & Garfunkel Blend – parsley, sage, rosemary and thyme. And salt.
The result was a GREAT Mojo blend for roast chicken and crockpot soups. My container is a large Smart & Final herb bottle. Label: plain paper from the color printer, taped on tight. Are you thinking “homemade gifts??” Who wouldn’t want a bottle of your secret Mojo with a recipe attached – I think you should go for it.
The four dried herbs listed in the recipe can be any combination of your choice. Perhaps garlic powder, onion powder, black pepper, lemon zest, basil, chives and others would also work well. Once you use up your supply, try another combo.
Recipe for Patti’s Mojo Spice Blend
- 1/2 cup kosher salt
- 1/4 cup dried parsley
- 1/4 cup dried, ground sage
- 1/4 cup dried rosemary
- 1/4 cup dried, ground thyme
In a large mixing bowl, blend all the ingredients together with a whisk. Store in an airtight container. Makes 1.5 cups.
