I Cannot Wait For Leftovers ~ My Two Favorite Post-Thanksgiving Recipes

Turkey-Leftover-Collage.jpgHere you go, I am pulling up my two all-time favorite uses for leftover Thanksgiving turkey – Noodle Bowl for Two and Thai Pasta.  Both have been published here before but I want to make a point of showing them to you again because it’s officially Turkey Season. Both obviously have Asian flavors. And they are one-pot meals, worth roasting an extra large bird then freezing leftovers in recipe-sized portions. That way, you can make either one in a snap.

Anything with Asian flavors, we love. We’ve been to China, Hong Kong, Japan, Thailand, Cambodia, Vietnam. Some more than once. India is upcoming, too. If I were to pick my #1 Asian country for the eats, it would be Vietnam and I think Larry would agree. Followed closely by Thailand. You have to like spicy for the most part. Limes, seasonings, peppers, lots of vegetables, steaming hot broth, a little meat, great noodles are the essence of my favorite Asian meals. So, a few times a month, I make my Americanized rendition. Enjoy these after your Thanksgiving feast, and Happy Holidays!

Based on all my forays to Asian restaurants over the years I’d have to say my favorite is Vietnamese as well. The flavors are bright and clean and yet complex. Really amazing. And my husband is originally from India and I LOVE his Chicken Curry.

These recipes look like good, creative ways to use that leftover bird.

Very seasonal and timely. The one thing I don’t like about not hosting Thanksgiving at my house is NO LEFTOVERS! GREG
