Saturday Salad with Creamy Avocado Dressing

Saturday-SaladFriday, we start “refrigerator management,” our ritual to unearth mismatched or unplanned-for things in the fridge and figure out meals to use them up. We don’t waste food, including leftovers. I grocery shop once a week, that’s it.

One Saturday breakfast, I started plotting lunch (one TRUE mark of a “foodie” is we often start thinking about the next meal while still eating the current one). The fridge had enough for a beautiful salad, with a little pre-planning.

Hard-cooked the last few eggs; this machine makes it foolproof. Microwaved remaining carrots, dunked them in ice water and put in fridge. Cleaned romaine to crisp it up. Then took a 3 mile walk.

Back home, began the OTHER ritual — “throwing the cat out.” She’s a young cat, full of energy, so throughout the day we try to burn her out a bit by shoving her outside via this door, then that one, and she makes her way back inside through the doggy door, requiring several fence-jumps. When she’s in, she wants out. And as you can see in my photo, when out, she wants to be in.

Saturday Salad with Creamy Avocado Dressing

DRESSING

  • 1/2 avocado
  • oil from jar of marinated artichoke hearts
  • 1 tablespoon mayonnaise
  • 1 tablespoon balsamic vinegar
  • Juice of 1/2 lemon
  • 3 drops Tabasco hot sauce
  • freshly ground pepper
  • salt to taste

Place all in a blender and whirl until creamy.  Refrigerate until use.

SALAD

These are the ingredients discovered during my Refrigerator Management survey. You can pretty much toss together anything you find that is salad-worthy:

  • Romaine lettuce
  • Garbanzo beans
  • Cooked carrots
  • Radish slices
  • Hard cooked eggs, quartered
  • The other half of the avocado
  • Marinated artichoke hearts (jar)

I love salads that have a mix of all goodies, and great idea the avocado dressing. Looks beautiful, you have a lovely site, I’m glad I found you.

Gwen, I always order salads like this in restaurants. AND make them at home. Gotta love salad.

This is my kind of salad…chock full of goodies! I am sure the dressing is really delicious with the salad. Will have to try your recipe.
